Paleo Chocolate Chip Cookies:
Ingredients:
1 cup almond flour (finely ground) OR
***for nut allergy - 1 cup rice flour, or 1 cup oats, or 1/2 cup coconut flour + 1/2 cup sunflower seed flour
1/4 cup cassava cauliflower blend from trader joes
1/2 cup coconut sugar or maple syrup
1 tbsp vanilla extract
A pinch of salt
1 tsp baking soda
1/4 cup-1/2 cup mini chocolate chips to taste
1 egg
4 tbsp of coconut oil or butter/ghee.
Bake for 12-15 minutes at 325F
